With all my focus on the Christmas feast, I forget to plan dinners for the rest of the week. And even though I visit my parents for the holidays, my mom puts me in charge of meal planning while I’m home. This week, I decided to take a look at all the delicious new recipes we published in 2023. And from a delicious enchilada skillet to a comforting bowl of lemon chicken soup, this week’s menu features some of my most favorite recipes from the past year, made in just 20 minutes or less.

Christmas is my favorite holiday of all time! I’m excited to be in my hometown, spending quality time with my family and friends. My sister and I are helping our mother prepare for a dinner hosted by my parents on Christmas Eve. We always make buttery green beans with roasted turkey, slivered almonds and wild rice. After dinner, my mother sets a dessert table with all the sweets her friends gave her in the days before Christmas. (In Mexico, it is common for friends to give each other small Christmas gifts such as cookies, pies, brownies or rompop, which is an eggnog-like drink made from almonds, milk, egg yolks, sugar, rum and cinnamon.) .) Since many people may have their holiday menus planned out, I included a few recipe collections to use as inspiration for last-minute planning rather than a fixed menu for Christmas Eve and Christmas Day. Although I think all of these dishes are delicious, Friday’s Steak Enchilada Skillet has a special place in my heart. This recipe includes ingredients I grew up eating in Mexico, like enchilada sauce, cilantro, corn, and whole wheat flour tortillas. Not only is this recipe on the table in just 15 minutes, but it uses a single pan to keep things simple and quick to clean. Added bonus: It’s a complete meal, so I don’t have to worry about side dishes.

Whenever I’m home in Chihuahua, Mexico, my schedule quickly fills up with back-to-back social engagements, ranging from visiting grandma to lunch with friends. What’s inspiring me this week
My family’s Christmas meal usually starts with a variety of cold cuts and cheeses, olives, toasted crostini, mixed salted nuts, and vegetables with creamy dips (even though we’re adults, my mom still wants us to eat more). Looking for ways to motivate for) vegetables). But to be honest, most of us usually skip eating vegetables. As the saying goes, you eat first with your eyes, and most crudite platters look boring. So this year, instead of just having them on a plate, I’m making this beautiful Crudites Christmas Tree. I hope this encourages everyone, including me, to eat their vegetables.
